Honey Mustard Pretzel Chicken

Made this tonight and the kids loved it!

*4 cups hard pretzels-I used honey wheat pretzels-1 bag will make a little over 4 cups
*1/2 cup olive oil
*1/2 cup dijion mustard
*1/3 cup honey
*1/4 cup water
*3 tablespoons red wine vinegar
*salt and pepper to taste
*boneless chicken breasts-however many you want-this makes 4-5 chicken breasts

Preheat oven to 400 degrees

Coursely grind pretzels in a food processor or by hand

Add oil, water, honey, mustard, and vinegar to a food processor and blend until smooth

Salt and pepper to taste(honestly didn't notice a difference)

Reserve half the liquid for dipping sauce-I recommend only using a little at a time-you might not need half the liquid for coating chicken and you want as much dipping sauce as possible. But you can't use what you have put raw chicken in as dipping sauce.

Coat chicken in liquid and than dredge in pretzels crumbs

Place on rimmed baking sheet and bake 20-25 minutes or until cooked through.

Margaret Thatcher

My husband believes every question can be answered with Margaret Thatcher, yogurt, Tuesday, 7, or underpants. So when my children once again insisted on a name for a recipe-we said Margaret Thatcher....and it stuck.

*Rameon Noodles--1-1.5 packages for every 2 people you are serving
*Chicken breasts cut into bite size pieces--1 for every 2 people
*Velveeta Cheese cut into cubes---I use half of block for 6 people

Make the Rameon Noodles and cook the chicken in the skillet until no longer pink. Add about 1/2 of the seasoning to the noodles.
Add the chicken and the cheese to the noodles and stir until the cheese is melted.
Serve and enjoy!

Manna

Yes--this recipe is called Manna. My children insist on a name for every recipe, This one didn't have a name. They kept asking for a name and in frustration my husband said manna. And it stuck.

*Box of rotini pasta
*Package of frozen broccoli
*jar of alfredo sauce
*2-3 chicken breast cut into bite size pieces

Boil the pasta
While the pasta is boiling, cook the broccoli according to the instructions and cook the chicken in a skillet until it is no longer pink.
Drain the pasta and the broccoli
Mix the broccoli, pasta, chicken, and sauce together
Serve and enjoy!

Ranch Pork Chops---amazing

Made these pork chops the other day....easy as all get out, and fantastic!

*Boneless pork chops---however many you need to feed who you are cooking for---I used 8 but that was for my family. I also used the thin cut pork chops
*2 packages of Hidden Valley dry Ranch dressing mix--or whatever brand you want
*2 cans of Campbells Cream of Mushroom soup---you can use an off brand but my experience has been it is worth getting Campbells for the soup part because their soup is better then the generic

Place the pork chops in the crock pot
sprinkle the ranch over top
dump the cream of mushroom over the top--spread it around so it's not in a big pile
cook on low for 6 hours or high for 4 hours

serve with mashed potatoes----easy-fast tip? Get Idahoan Instant Mashed Potatoes--the 4 cheese kind. (Don't judge me) They come in a pouch for around $1--I use 2 to feed my family of 6. It takes water and the pouch. Boil the water, dump the potatoes in and stir. Easy and they are really good---and I"m not a fan of instant mashed potatoes. Make those, and top with the gravy from the crock pot. Or make real mashed potatoes---which I do but when I am short on time I use these

Cola Pot Roast

This is in the pot roast as I type this-love this dish and it is so easy!

Ingredients
*roast--chuck/rump/pot--I use about 3 pounds for all 6 of us
*dry onion soup mix-1 packet--the generic works just fine
*Cream of mushroom soup--I always use Campbells-it's a little more expenisve then generic but is better in my opinion
*1.5-2 cans of Coke/Pepsi/other cola

Put the roast in the crock pot
Cover with cream of mushroom soup--dump it in and then spread it over the top of roast
Sprinkle the packet of onion soup over the top
Pour cans of pop over the roast
Cook on high 6 hours

Pretty simple but amazing and makes the house smell like you have been slaving over the stove!

Pizza Fondue but with Rice

My kids have a need to come up with a name for everything that doesn't already have a name. The  name of this recipe is a product of that. It was similar to something I made once (Pizza Fondue)n but I made it with rice---and the name pizza fondue but with rice was born. It is a super easy recipe that my kids LOVE and it is cheap and fast for a dinner or lunch that differs from sandwiches

Make Minute Rice--I buy the Walmart version and it takes just over 5 minutes--according to directions
Once cooked, add basil (I just put in a sprinkling-no real measurement) and Parmesan cheese (again, no real measurement here)
Add cut up pepperoni slices--I use about 15 slices but I am making enough for four kids so adjust as needed
Stir in pizza sauce until it is all covered
Serve!

The whole dinner takes about 10 minutes to make and costs about $3 to feed 4. And the kids love it!
